Growing up, Goldilocks Bakeshop was one of the only prevalent Filipino establishments I'd ever really seen in the States. One of my favorite pastries is called mamon which is a Filipino sponge cake. The butter one is the OG flavor, but I personally think the mocha one is the best flavor! Goldilocks bakeries aren't in my state so I've had to rely on my family to bring me some whenever they were stopping by one in CA. Lately, there are a lot more Filipino grocery stores and restaurants in my area, but still no Goldilocks! Luckily, with the help of the internet, I found an old post from Goldilocks USA and gave it a go.

I don't have a stand mixer...

That's not a question but I'll go with it. You can use a hand mixer but I definitely don't recommend trying to do this without some sort of mixing device.

Almost everything is in grams, can you convert it to US Standard?

I could, but no. I highly recommend getting a kitchen scale. It's honestly a lot easier to mise en place and scale things. Weighing your ingredients also guarantees the same results every time.

Where do I get a mold for this?

Apparently they have mamon molders for this? I didn't realize molder was a term so do with that what you will. I didn't need another set of pans in my kitchen so I used a mini tart pan. Some people have tried this in a muffin tin and it works out pretty well!

Can you make this into a traditional cake?

I haven't tried it but this sounds like a fun experiment! Give it a go and let me know how it works out. Who knows, I may give it a try, too!
